Greenfield Venison

In the autumn of 2025, we launched Greenfield Venison – wild venison from our farm, available to purchase seasonally in our Christmas shop, at pop-ups in Watlington and by newsletter/email.

Nearly half our farm is ancient woodland and Forestry England require deer management to be compliant with the UK forestry standard. It also gives us great pleasure to share our wild venison (fallow and roe) with the wider public, which is not only delicious but sustainable and naturally a very lean and healthy meat.

The excessive numbers of the deer in the Chilterns – fallow, roe and muntjac – are causing considerable damage to ground flora and the natural regeneration of trees, as well as crops (including Christmas trees). The exponential growth of the deer population is an issue of great concern to environmentalists, farmers and landowners in the area, and it is thanks to a 50% grant from Chilterns National Landscape (Farming in Protected Landscapes grant programme) for our new meat chillers that we have been able to get started.

Venison has one of the best nutritional profiles of all meat:

  • great source of iron, zinc and B vitamins including niacin and B12
  • contains more omega-3 than farmed red meat such a beef or lamb due to its natural diet
  • contains more heme iron than beef, which is better absorbed by the body
  • high in protein, containing 23g per 100g
  • extremely low in fat with 0.4g per 100g, and very low in calories with just 95 per 100g, making it leaner than chicken and turkey (both approximately 115 calories per 100g).
